Mixed Grain Zucchini Bread

My father-in-law came over for dinner last week and brought some wonderful produce from his garden. One of which was a beautiful large zucchini.  It took me no time to decide what to do with it!  Prep starts tomorrow so I made zucchini bread today as part of my "last supper".
Another keeper. ;-)

                 Mixed Grain Zucchini Bread


                                      


1 cup ground oats
1 cup whole wheat flour
1 cup all purpose flour
1 cup sugar cane natural (sucanat)
1 tsp sea salt
1 tsp baking soda
1 tsp baking powder
3 tsp ground cinnamon
3 egg whites
2 cups organic unsweetened applesauce
2 tbsp vegetable oil
3 tsp vanilla extract
2 cup grated zucchini 
1 cup crushed walnuts

Prep two bread loaf pans by spraying with Pam and flouring. Preheat oven at 325 degrees. 

Whisk together all flours, oats and sucanat. Sift in remaining dry ingredients. Add egg whites, vegetable oil and applesauce and mix until all ingredients are combined. Then add vanilla extract and zucchini and combine. Finally mix in nuts. 

Pour mixture evenly into the two bread pans and bake for approximately 45-50 minutes. Use a toothpick in the center of the loaf to check the readiness of the bread. When toothpick comes out relatively clean, take bread out of the oven. Let rest for about five minutes, then flip out onto a cooling rack for about 15-20 minutes, then slice. 

You can choose to substitute the cup of all purpose flour for another cup of ground oats or whole wheat flour but you may want to add a little more applesauce to ensure that the bread stays nice and moist.
